Tomato Sherry Vinegar Vinaigrette
This is a really handy variation on a plain French vinaigrette. It is particularly good for poached or steamed vegetables. Be sure to have a good quality sherry vinegar. Try this with steamed artichokes or grilled asparagus, Its great with grilled chicken or on sauteed potatoes.
