Conchiglie like Penne is one of the most popular shapes and are very versatile in the choice of sauce and you chose. The very small ones Conchigliette are used in soups, while the very large Conchiglioni (large) can be stuffed with a variety of fillings. Below is an image showing how varied the size difference can be in their manufacturing. They can be stripped like below or smooth.

    A Quick Note

    I wanted to take a minute to say that I do try and weigh as many of the ingredients as I can. I think it helps make recipe results more consistent. Of course professional bakers even measure liquids by weight. I don't mind pulling out my little digital scale when I need to.
