Humus with Tahini
This is a good little, fast recipe, about 10 minutes, if you are having friends over and need things to pick on. Just be sure to have enough bread for everyone.

This should be enough for 6 people with a couple of other small things to pick on. Try marinated artichoke hearts and some thinly sliced salami.

2 - 400 gr

cans of chick peas

110 gr. or 4 oz.

tahini paste (sesame paste)

2-3 msk or tbls.

olive oil

2

cloves of garlic

2 msk. or 2 tbls.

parsely - 3 or 4 sprigs

1/2

small glass of warm water

2-3

juice of 2 to 3 lemons

1 tsk or 1 teas

paprika

salt and pepper to taste

Assembling the recipe:

Drain and rinse the chick peas and put them in a food processor with the parsely, garlic and olive and process until it forms a very smooth paste.

Add your warm water a little at a time to help smooth out the chick peas while your processing them.

Salt and pepper the mixture in the processor.

Notes:

You can of course use dried chick peas, they will need to be soaked over night and cooked the following day. Canned chick peas work very well for this, be sure to pick out any discolored peas from the cans.
