/ Custard ring mold
This
little darling I bought 20 years ago for 25 cents in a second
hand shop and have never felt the desire to change it. Bavarian
or ring molds come in lots of different sizes and materials.
I like the metal because it contracts the cold quickly when
placed in the fridge. It is made of pressed light weight metal,
in any case it is something that does not seem to react with
all the different things that I have used it for. These are
sold by the amount of liquid that they hold.
It
has molded sweet tapioca rings, chicken & crab mousses,
tomato jelly and of coarse many different desert custards
and mousses. I like the ring form because they are easy to
decorate and the centers can be filled with whipped cream,
fresh fruits or appropriate sauces.
