Garganelli is one of the pastas that is better when made fresh. It is a real treat and can be dried properly and saved for up to 2 months.

The upper photo shows garganelli being shaped on an old fashion garganelli comb by wrapping a small square of pasta dough around a stick and then rolling it over the comb. You can buy something like this one or a garganelli board on the internet or in your local kitchen supply store.

You can also just buy a plastic comb of the right size for 10 cents and screw it to a piece of wood to get the same effect. I've seen it done!
