These ravioli are one of the most typical dishes of Ragusa , the dumplings are seasoned with cheese produced nell'altopiano, however, must be sweetened ricotta.

Cavatelli Ravioli and are often eaten together with seasoned tomato sauce for pork . This sauce ( to sarsa or sugu u ) is obtained by slow cooking of pork, sausage Ragusa, rind, cooked with strattu ( tomato sun-dried) and tomato sauce .
