Bertù are a handmade stuffed pasta made in a half moon or crescent shape, The dough is made with wheat flour, salt and eggs. The filling is made using cotcchino (a type of pork sausage), parmigiano and eggs. They are also known as “donkeys ears”) because of their shape.
