Bardele Coi Morai made by hand is made with wheat flour, borage leaves, eggs and salt. The factory variant is made with wheat flour and water. Bardelele (ribbons) Coi Morai (borage) are made like spinach pasta they are cut into long ribbons like tagliatelle being 1cm wide (or 3/8 inch). The pasta is boiled as usual and served with a sauce made of butter, parmigano, and sage leaves.
