Agnoli di Mostardele or Agnoli delle Valli Valdesi, are a filled pasta. The dough is made with wheat flour, bran and buckwheat flour, walnut oil and eggs. The traditional filling is a combination of leeks and mostardele, a salami made from pork offal and cooked in red wine and seasoned. They are served with a traditional leek sauce.
