Herb: Lemon Thyme, (Thymus × citriodorus (Citrus Thyme; hybrid T. pulegioides × T. vulgaris), often are labeled "lemon" thyme in garden centers, and many feature variegated leaves.
Season:
Lemon thyme like Common thyme is a Mediterranean perennial which is best suited to well-drained soils and enjoys full sun.
Uses in Cooking:  

Medium green and yellow variegated leaves that have a slight lemony flavor are mostly used to flavor soups, vegetable and are excellent in fish dishes and sauces.
