Herb: Thyme, Common Thyme or Garden Thyme, (Thymus vulgaris), is a genus of about 350 species of aromatic perennial herbaceous plant in the family Lamiaceae and is native to Europe, North Africa and Asia.
Season:
Common thyme is a Mediterranean perennial which is best suited to well-drained soils and enjoys full sun.
Uses in Cooking:  

Thyme is often used to flavour meats, soups and stews. It has a particular affinity to and is often used as a primary flavor with lamb, tomatoes and eggs. Thyme is a basic ingredient in French, Greek, Italian, Persian, Spanish and Turkish cuisines, and in those derived from them. It is also widely used in Lebanese and Caribbean cuisines.

Fortunately most thyme dries very well and can be stored in your cabinet. Fresh thyme is available usually in your local market.
