Herb: Summer Savory (Satureja hortensis) is the better known of the Savory species. It is an annual, but otherwise is similar in use and flavor to the perennial Winter savory.

Season:
Very low herb with purple stems and small feathery soft needle like leaves. Fresh stems This herb has lilac tubular flowers which bloom from July to September.
Uses in Cooking:  

Used in the summer the young leaves are delicate in flavor and used in salads, with green beans in some egg dishes, vinaigrettes and with fatty fish, roast pork, potatoes, and tomatoes. Summer savory is preferred over winter savory for use in sausages because of the sweeter, more delicate aroma.
