Herb: (Sanguisorba minor) is a clumping perennial.

Season:
Harvest leaves as needed through the growing season. Round heads of reddish- graceful, lacy, divided foliage that has a distinct cucumber aroma and taste. Adaptable to a wide range of soil conditions, but prefers a well-drained soil with some lime.
Uses in Cooking:  

The cucumber-flavored leaves add flavor to cool drinks, salads and sauces. Cucumber flavored it is used in Italy in salads. In southern Europe it is evergreen through the winter months. Seeds are soaked in vinegar and used in salads. Leaves can be added to vinegars, herb butters and sauces. They compliment cheese well. Pick leaves as needed through the growing season.
