Aromatic Flavoring: Pearl Onions belong to the tree onion family.

The Cipolline Borettane (pronounced Chip-o-leen nee) is a popular Italian pearl onion known for its flat, saucer-like shape. Previously produced only in Italy, these unusual and elegant onions are now grown throughout Europe. But they should not be confused with what we normally think of as pearl onions.

Uses in Cooking:  

These small brown onions are perfect for pickling and are good served with various cheeses. They are used whole, peeled for stews and casseroles. They can be peeled more easily by boiling them in water for one minute and then refreshing them in cold water.

They are a particularly good vegetable on their own, peeled, whole and cooked in the oven with a bit of butter, chicken or veal stock for about 45 minutes or until most of the liquid has evaporated and finished with a small bit of butter.

Available year round at the supermarket or green grocer. Store onions in a dry, dark, cool, well-ventilated place; not in the refrigerator.
