Aromatic Flavoring, Garlic (Allium sativum L.), commonly known as garlic, is a species in the onion family Alliaceae. Its close relatives include the onion, the shallot, and the Leek (vegetable) leek.
Season:
Garlic is easy to grow and can be grown year-round in mild climates. In cold climates, cloves can be planted in the ground about six weeks before the soil freezes, and harvested in late spring. It can be stored for months in a dry cool dark place.
Uses in Cooking:  

Garlic like onions is one of the most popular herbs in the kitchen. It is used extensively the world over. Garlic is a natural accompaniment to lamb and most roast meats. Garlic is not traditionally used in any quantity in most European fish cookery. But it does seem to find its way into almost everything else these days. Garlic is fantastic on its own roasted and raw can be used to make garlic flavored oil, keep in mind that homemade garlic oil will only keep about a week in the fridge. Commercially manufactured flavored oils have additives and preservatives in them so that there is no chance of you contracting botulism which can be deadly.

How doesn’t garlic come? It is bought and used as the traditional dried bulb, dried and powdered, flaked and roasted, chopped or whole in oil, as a paste in a tube and powered with added salt and sold as “garlic salt”.
