Aromatic Root, Spice: Galangal, (Alpinia galanga), a plant in the ginger family. It is one of four plants known as galangal, and is differentiated from the others with the common name greater galangal. The galangals are also called Blue Ginger or Thai Ginger.
Season:
For us here there is no real season for fresh galingal root as it is imported and grown all year round.
Uses in Cooking:  

Though it resembles (and is related to) ginger in appearance, it tastes little like ginger. In its raw form, galangal has a soapy, earthy aroma and a pine-like flavor with a faint hint of citrus. It is an herb used in cooking, especially in Indonesian cuisine and Thai cuisine.

Other Uses:
Galingal is used throughout Asia as a tonic, stimulant and is also thought to be an aphrodisiac.
