Herb: Comfrey (Symphytum officinale L.) is a perennial herb of the family Boraginaceae. It is native to Europe, growing in damp, grassy places, and is widespread throughout Britian on river banks and ditches.
Season:
Uses in Cooking:  

Young fresh leaves can be used sparingly in salads or cook them as you would for spinach. Using them only before the plant blooms.

Comfrey is used before flowering, only the fresh young leaves of the plant are used.
Other Uses:
In 2001, the United States Food and Drug Administration issued a warning against internal usage of herbal products containing comfrey. But comfrey in the organic garden seems to be sent from heaven. Extremely useful as a fertilizer it can be grown for just that purpose.
