Spice: Cayenne (Capsicum annuum) is a red, hot chili pepper used to flavor dishes, and for medicinal purposes. Named for the city of Cayenne in French Guiana, it is a cultivar of Capsicum annuum related to bell peppers, jalapeños, and others. The Capsicum genus is in the nightshade family Solanaceae.

Available all year dried and ground.

Uses in Cooking:  

Use sparingly for a pungent zing in Mexican dishes, sauces, meats, eggs, stews and curries. (On the Scovil scale of 1 to 10 for chili peppers, cayenne rates an 8). Chilies originally came from Mexico.
