In culinary terms albacore tuna refers to canned tuna. The 2 brominates varieties used are Yellowtail and Long fin. Long fin grows to about half the size of Yellowtail which can grow as large as 2 meters and weigh in at about 200kg. or 400pds. Yellowtail is the most prized of the 2 and is what we normally use for tuna steaks or sushi.
In Southern Europe albacore tuna was first canned in Sicily at the beginning of the century and is still thought of as one of the best that can be bought. Tuna is fished in almost all the warmer parts of the oceans around the world. This fine white canned tuna is bought packed in water, different types of oil and several sauces, tomato being the most prominent.
It should be noted that canned tuna of the best varieties still seem to come the Mediterranean but really fine grade tuna has gotten expensive and the consumer who is not fussy about what he buys can purchase some pretty terrible stuff. Buy the best you can afford, the really cheap shop brands are usually a disappointment.
Although it is not my place to recommend any particular brand for people who have kids and need good affordable food, Willys tuna in oil is not a bad choice. It is almost 1 dollar cheaper a can compared to the local Swedish premium brand (ABBA)
