À la Nage

A French term, technique and form of serving: À la Nage means poaching, usually its seafood, poached in a court bouillon and served with the vegetables from the poaching liquid as a garnish. Meaning the vegetables should be prepared in a manner as to be attactive at service. Vegetables can be cut in julienne.
